1 stick light string cheese
3 wedges The Laughing Cow Light Creamy Swiss Cheese
3 tbsp Frank's Red Hot Original Cayenne Pepper Sauce
10-oz. can 98% fat-free chunk white chicken breast in water, drained well & flaked
10 small (6-inch) yellow corn tortillas
Tips
If you're not into canned chicken, use 1 1/2 cups of cooked and shredded skinless chicken breast instead.
Directions
Preheat the oven to 375 degrees. Spray a baking sheet with nonstick spray.
Break sting cheese into thirds and place in a blender or food processor; blend at high speed until shredded. Or pull into shreds and roughly chop.
In a medium bowl, mix cheese wedges with hot sauce until mostly smooth and uniform. Stir in chicken and shredded string cheese.
Place tortillas between 2 damp paper towels. Microwave for 1 minute or until warm and pliable.
Spread each tortilla with chicken mixture evenly, about 2 tbsp. Tightly roll up into a tube, place on baking sheet seam side down and secure with a toothpick if needed.
Bake until crispy, 14-16 minutes. Don't worry if they crack and "explode" a little. Enjoy!
