Introduction

Number of Servings: 3

Ingredients

    1 cup edamame - shelled (I use frozen veggies unless noted)
    1 egg, scrambled
    2 cups brown rice, cooked
    5 fresh baby carrots, diced and simmered for about ten minutes with
    1 stalk diced celery
    0.33 cups broccoli ( frozen or fresh)
    (add onions, peppers, peas, baby corn or whatever you have available for more fun!)

Tips

Don't overcook or it will turn mushy because of the brown rice. :)


Directions

Cook rice. Steam veggies about ten min. Scramble egg. Set aside. Heat 1 tbsp canola oil (I don't like evoo in my stir fry, you can use it if you like) throw in the rice and egg. Add veggies and season with soy sauce / mrs dash to taste. Alternatively you can buy the fried rice seasoning packets at the store, but they are very high in sodium. Cook about 5-10 minutes, until desired consistency. Enjoy!
