    3 oz. baby carrots chopped or shredded
    1/4 cup shredded cheddar cheese
    1/4 yellow bell pepper, sliced
    4 slices purple onion
    2 hard boiled egg, chopped or sliced
    oil and vinegar dressing, 2 tbsp.
