Ingredients

Cauliflower, raw, 1 head, medium (5-6" dia)
Tuna, Canned in Water, 1 can
Green Peppers (bell peppers), 1 cup, strips
Butter, salted, 2 tbsp
Kraft Shredded 2% Mexican Four Cheese blend, 1 cup
Extra Virgin Olive Oil, .33 tbsp (remove)
Parmesan Cheese, grated, .25 cup (remove)
Onion powder, 1 tsp.
1/3 tsp. Cajun seasoning (or 1/8 tsp. cayenne pepper)
Directions
1. Grease dish(s) with coconut or olive oil and set aside.
2. Steam/boil cauliflower until just tender.
3. Preheat oven to 350º.
4. Drain liquid off the cauliflower and slightly mash with a fork, but don’t reduce it to mush. Place cooked cauliflower into a large mixing bowl.
5. Saute the bell pepper in the butter in a small skillet over med-high until tender. Scrape into the bowl bowl.
6. Add all remaining ingredients and stir well to evenly mix the ingredients.
7. Spoon into greased dish(s) and bake at 350º for about 20 minutes or until lightly browned on top.
8. This dish is delicious served with a green salad or would be good with just about any green vegetable.
