Ingredients

    2 cups carrots roughly chopped
    1 large potato chopped
    1 parsnip chopped
    1 large onion chopped
    1 tbs fresh ginger
    Jerk seasoning (to taste)
    5 cups broth (your choice)
    1.5 cups milk

Tips

this is a great soup to make when you have random items to use up. amounts of each may vary as long as you have enough broth to blend to a smooth consistency.


Directions

add all ingredients except for milk to a heavy bottom large pot. bring to a boil. reduce to simmer 15-20 minutes until all vegetables are very tender. Blend with immersion blender or in two batches in a standard blender. Return soup to pot and stir in milk. Serve over pasta.
