Ingredients

    Aioli:
    1 egg yolk
    1 tsp vinegar
    1 cup olive oil

    Salad:
    1/2 c. aioli
    8 hard boiled eggs, diced
    1 c. celery, diced
    1/2 c. onion, diced and soaked in water for 15 min.
    1 tbsp (or more) dijon mustard
    juice of one lemon

Tips

If you make your own mayonnaise . . . it's so much work you'll hardly ever eat it! Plus you know what's in it.


Directions

To make aioli (mayo made with olive oil):
1. Whisk egg yolk, a dash of salt, and a dash of vinegar.
2. Working a very little bit at a time, whisk the olive oil into the yolk. Do not stop whisking! Whisk until it's all incorporated.

Salad:
Chop everything and mix together with the mayo/aioli.

Serving Size: makes about 8 cups
