Ingredients

4 leeks
2 medium parsnips
1 apple
1 medium/small potato
1 cup low sodium broth
4 cups water

A submersible blender makes this easy
You can add 1/4 cup milk/cream at the end
Directions
Clean leeks, put greens in a largish pot
Peel parsnips, put peels and trimmings in the pot
Peel potato, put peels and trimmings in the pot
Add the water to the pot, bring to a boil, cover and simmer for 20 minutes.
While the stock simmers chop leek greens and other vegetables, put in a pot with the stock.
Strain the stock and add enough to the vegetables to cover.
Bring to a boil, and simmer for 1/2 hour.
Puree.
Serving Size: makes 5, 2 cup servings
