Ingredients

    6 oz. fish filet, I used swai (farmed catfish
    1 Tablespoon cornmeal
    Mrs. Dash garlic and herb seasoning, to your taste
    Nonstick cooking spray
    Butter spray


Tips

To change up the seasonings, sometimes I just do salt and pepper with paprika and a dash of cayenne. Or I use some Jamaican seasoning, or creole seasoning. Or even a sprinkle of Old Bay. Any fish filet will do, i have used this recipe with tilapia with good results.


Directions

Mix the cornmeal and seasonings together in a plate or on a piece of waxed paper. Rinse the filet and pat dry then coat the filet with the cornmeal and seasoning mixture. Spray a skillet and heat to medium high. When the skillet is hot, add the fish. Spray a few times with the buttery spray, when the fish is lightly browned on bottom, turn and spray again. Cook until the fish is nicely browned and crispy, flaky inside. You can use a little oil in the skillet if your diet allows.
