Introduction

My version of mashed potatoes using cauliflower instead of potatoes. My version of mashed potatoes using cauliflower instead of potatoes.
Number of Servings: 3

Ingredients

    3 C. cauliflower, Roasted (2 heads, fresh)
    1 T Coconut Oil, melted
    1 T garlic powder (or less if it is too salty)
    1 T Salt (or less for less salty)
    1 T black pepper
    1 T Better Than Bouillon Chicken Base
    1/3 C Non Fat Greek Yogurt


Directions

Cut up cauliflower into florets. Toss in bowl with melted coconut oil, salt, pepper, and garlic powder to coat. Put on a cookie sheet and roast in 400 oven for about 30 min. When cool, puree in food processor until fairly smooth. Add greek yogurt and bouillon and blend until mashed potato consistency. Will have to reheat before eating.

Serving Size: makes about 3 1-cup servings
