Ingredients

    1/2 dry quinoa
    8-10 sundried tomatoes - if not jarred, rehydrate and chop
    1/4 c. egg beaters
    1.5 oz feta cheese
    1 clove garlic - minced
    1/4 red onion - chopped
    1 tbl parsley
    salt / pepper to taste



Tips

Enjoy with a drizzle of olive oil on top:)


Directions

Preheat oven to 350 and spray muffin tins with non-stick spray. Cook quinoa in 1 cup water. Add all ingredients in a large bowl and mix well. Scoop into muffin tins all the way to the top. Bake for 25 minutes. Let cool completely before removing or they could crumble.
