    50g plain flour
    30g brown sugar
    1 egg
    1/2 tsp baking powder
    70ml milk of choice
    1/2 tsp cinnamon
    1/4 tsp mixed spice
    1/4 tsp ginger
    1/2 tsp vanilla extract
    100g grated carrot
    Optional: a handful of raisins


They're nice topped with Greek yogurt with some added mixed spice, you could also sprinkle them with chopped walnuts after they have been cooked.


Mix all of the ingredients together and fry as you would any other kind of pancake.

They are cooked once they have turned a golden - dark brown colour.

Serving Size: Makes 2 Large pancakes or many small ones. Enough to feed 1 - 2 persons.
