Introduction

Ingredients

19 oz enchilada sauce
12 oz frozen corn
14 oz chicken breasts
1 can (4.5oz) diced green chiles
1 can (15 oz) black or pinto beans (drained, rinsed)
2 cups chicken broth
Shredded Mexican Cheese, if desired
Chopped fresh cilantro, if desired
Crushed tortilla chips, if desired
Directions
Place all ingredients in slow cooker. Cut thawed chicken into cubes and place in slow cooker. Mix and cover; cook on Low heat setting 7 to 8 hours.
Top each serving with cheese, cilantro and tortilla chips (if desired).
Serving Size: Makes 5 servings (approx 1.5 cup each)
