Introduction

Ingredients

    1 1/2 cups water
    3/4 cup quinoa
    1 1/2 cups old fashioned oats
    1/2 cup roasted unsalted sunflower seeds
    1/2 coarsely chopped walnuts (pieces)
    1 cup dried mixed berries
    1/4 cup sugar
    1/2 tsp coarse salt
    1/4 cup honey
    2 tbsp neutral tasting oil (like canola)
    1 1/2 tsp vanilla extract
    2 large eggs plus 1 egg white
    vegetable oil cooking spray

Tips

store in the fridge if you know you won't eat them in a couple days. haven't tried freezing, if you do let me know how it goes.


Directions

heat oven to 350. cook quinoa in water about 12 minutes, till most of the water is absorbed. meanwhile, toast oats for 5 or 6 minutes till they're golden brown. then, toast walnuts 6 or 7 minutes till they smell. put oats and nuts in a bowl, transfer quinoa to roasting pan and roast for 15-20 minutes, till it's basically dry, stirring a couple times. meanwhile, add seeds, berries, sugar, and salt to the bowl. after you take out the quinoa, while it cools, add honey, oil, and vanilla to the eggs. then mix quinoa into dry ingredients. finally, mix wet ingredients in. spray standard 9x13 and pour in. flatten. cover loosely with foil and bake for about 25 minutes or until firm. this time could vary by as much as 7 minutes... play with it.
