Ingredients

1 medium onion
1 large carrot, sliced
3 cloves garlic, crushed
1 medium red pepper
1 tbsp olive oil
3 tbsp chili powder
1-2 tsp cumin powder
1/2 tsp cayenne pepper
2 medium tomatoes, diced
1 small can tomato paste
1/2 cup tomato sauce
1 cups dried lentils
3 tbsp juice from pickled jalapenos, or 1/4 cup diced jalapenos
1/2 can or bottle beer
1-2 cups water
1 can black beans
1 can kidney beans
1 can yellow corn
Directions
Chop up an onion, whatever peppers are in the fridge (red, green, spicy, etc.), a carrot, some garlic and in a large pot, saute those all together with the olive oil.
Add chili powder, cumin and cayenne. Stir well. Add more or less spices to your taste if desired.
Add diced tomatoes, tomato sauce, a small can of tomato paste, a cup or two of lentils, and the same volume of water. Add the jalapeno juice and the beer. Cover and simmer for a good while, until the lentils are tender and have soaked up much of the liquid.
Stir in a can of black beans, a can of kidney beans, and any other half cans of beans in the fridge. Let simmer another 5-10 minutes.
Add a cup or two of corn right at the end and take it off the heat. Mmm-mmm!
