Ingredients

    Cauliflower, raw, 1 head, large (6-7" dia)
    Egg, fresh, 1 large
    Cheese, Mozzarella,Skim, Shredded, 0.33 cup
    Cheese, Mozzarella,Skim, Shredded, 1 cup
    Prego Light Smart Traditional Italian Sauce, 0.75 cup
    Spice/seasoning to taste

Tips

For more protein, add diced chicken. You can also add veggies etc. Just make sure to cook all toppings through first since the cook time in broiler is just to melt the cheese.


Directions

Rice the cauliflower (the whole head minus the stems/leaves etc!) in a food processor and cook covered in microwave on high for 7-8 minutes. Thoroughly dry (a very important step!) with a towel (or paper towels).

Combine cauliflower with the egg and 1/3 cup cheese and italian spices (garlic, etc).

Spray baking sheet with non stick spray - make a super thin crust out of the mash (maybe 1/4 inch thick at best).

Bake at 450 for 20 minutes.

Top with sauce and cheese, bake in the broiler until cheese is melted.

Serving Size: Makes 2 servings (half a pizza)
