Ingredients

    2 tbsp olive Oil
    1.5 ounces of cooked cubed chicken
    1 cup cooked (.5 dry) quinoa
    Chopped Bell Peppers

Tips

I cook the Quinoa and Chicken, and chop the bell peppers over the weekend and keep them in the fridge. You can put this together for a very fast dinner, and then take half for lunch the next day. Very satisfying.


Directions

Put olive oil in small fry pan
add half cup chopped bell peppers, saute for a few minutes until they get soft
add chopped cubed chicken saute until warm
add Quinoa (1 cup cooked) saute until warmed through
