Ingredients

    12 large eggs
    6 oz velveeta cheese
    1-1/2 cup of diced lean ham
    1/2 cup diced red onion
    2 4oz cans of mushroom pieces
    1 can of cajun stewed tomatos
    1 cup of great value fiesta blend cheese

Directions

Beat eggs and add all ingredients except grated cheese.
Spray a 9x13 pan with pam and pour in the mixture. Bake at 350° for about 1 hour or until knife inserted in center comes out clean. Sprinkle cheese on top. Let cool for 10 minutes and cut into 12 pieces.
