Ingredients

    3 Lbs Chicken Breast (4 whole), raw, no skin
    4 slices low fat Swiss
    4 slices low fat Muenster
    12 slices lean deli ham
    Seasoned bread crumbs
    Seasonings to taste

Tips

You are going to look like such a pro when this is served.

I am going to use less ham next time. Maybe more cheese.


Directions

Pound each of the 4 chicken breast to about 1/4 inch thick (the thinner/larger it is, the easier the next bit will be). Season both sides of chicken with herbs of your choice or just salt and pepper. On one side place a slice of each cheese and 3 slices of ham.

Not it gets difficult. Think "jelly roll". Roll the chicken to encompass the cheese and ham inside, roll as tight as you can, close off the ends if you can, and secure with as many toothpicks as you find necessary.

Then roll the entire thing in seasoned bread crumbs, coating completely, and place on greased tin foil on a baking sheet. Repeat for all 4 breasts.

Bake at 350 until chicken is no longer pink. Cheese will ooze, that's normal. Serve straight out of the oven, one breast is large enough to feed one very hungry person but half a breast is a decent portion itself.
