Ingredients

    1/2 cup dry quinoa
    1/2 cup uncooked orzo
    1 can reduced sodium chicken broth
    1 cup water
    6 ounces frozen mixed veggies
    1 tbsp extra virgin olive oil
    wedge of lemon

Tips

* Olive oil is hot when it runs like water around a saute pan. It can also be tested by dropping a few drips of water into the pan. If it sizzles, the oil is hot enough.
* Olive oil has a low smoke point - be careful not to overheat!
* Use a flavored olive oil (I like basil, lemon, and red pepper) for an extra kick of flavor!


Directions

In a rice cooker (or over the stove) combine quinoa, orzo, chicken broth and water. Cook until all liquid is boiled away, and the orzo/quinoa mixture is cooked and sticky.

Meanwhile, heat 1 tbsp of extra virgin olive oil in a saute pan over medium high heat. When the oil is hot enough, toss in the frozen vegetables and stir fry, about 5-8 minutes. Toss quinoa/orzo mixture with the cooked vegetables, with the juice from a wedge of lemon.

Serve hot (great with Greek Chicken, pictured)
