Introduction

Ingredients

    10 ounces of 90% Ground Beef
    2 Large bell peppers, chopped
    2 Large Onions, chopped
    12 Cloves garlic, chopped
    2T Chili Powder
    Cumin- to your taste
    1/2 t. Cayenne pepper
    28 Ounces Green Enchilada Sauce
    1/2 Cup Water
    2-15 Ounce Cans of Pinto Beans rinsed

Tips

1 Starch ,2 vegetable ,3 lean meat. 1 1/2 Carbohydrate Serving.


Directions

Cook beef,bell pepper and onion in a large saucepan over medium heat, crumbling the meat with a wooden spoon, until the meat is browned, 8-10 minutes. Add garlic, chili powder, cumin and cayenne; cook until fragrant, about 15 seconds. Stir in sauce and water; bring to a simmer. Reduce heat to medium-low, cover and cook, stirring occasionally, until the vegetables are tender, 10-15 minutes. Stir in beans and cook until heated through, about 1 minute.
