Introduction

Like traditional artichoke dip, but no mayo and better tasting. Can be eaten fresh with veggies, low fat chips, as stuffing for mushrooms, or for pasta. Ingredients

    artichoke hearts, best fresh vacuum packed, but canned will do
    Parmesan cheese, freshly grated
    olive oil
    walnuts, best toasted and cooled, can substitute with other nuts
    garlic, just a little, half a clove
    salt, dash (optional)
    anchovy paste (optional)


Directions

put all ingredients in food processor and turn into a paste

can be frozen for later

Serving Size: 4 or 5 chip or veggie small scoops per serving
