Introduction

These are a savory twist on Cottage Cheese Pancakes and actually taste similar to a latke, but without the potatoes. They are delicious! These are a savory twist on Cottage Cheese Pancakes and actually taste similar to a latke, but without the potatoes. They are delicious!

Ingredients

1 cup of Better'n Egg substitute egg product
4 cups Cottage Cheese with Pineapple 1%
    3/4 cups Flour
    2 cups Sweet Onions, chopped
    2 1/2 tablespoons salted butter

Tips

I made the serving size 1 pancake, so you can decide how many you want based on the nutrition information.

Directions

In a large bowl, mix together the Better'n Egg Product, cottage cheese with pineapple, and flour with a whisk until combined. Set aside. Saute the chopped onions in butter until golden. Add to the cottage cheese mixture and stir to combine. Coat a non-stick skillet with non-stick cooking spray. Spoon 2 tablespoons of the mixture into the pan and spread out to about a 3" circle. Cook until edges are a little brown and little bubbles start to appear. You may not always see bubbles, so use your judgement of when to flip them. Cook until done and repeat with the rest of the mixtures.
