Introduction

Couscous bursting with flavor! Couscous bursting with flavor!
Number of Servings: 6

Ingredients

    1 c couscous
    1 c boiling water
    2 cubes chicken boulion
    1 1/2 T olive oil
    1 T curry powder
    2 cloves garlic
    1 medium red bell pepper, chopped
    1/2 medium onion, chopped
    1 can rotel tomatoes
    1 pinch salt
    1 pinch pepper
    2 T balsamic vinegar
    4 T parmesan cheese



Tips

**If you want a more versatile dish you can leave out the curry powder and serve with just about anything!


Directions

1) Bring water and boulion to a boil
2) Stir in couscous, return to boil, then remove from heat and cover. Let stand 5 minutes. Fluff with fork.
3) Heat oil and curry powder in skillet on medium heat for 5 minutes
4) Add garlic, onion, peppers. Saute for 3-4 minutes.
5) Stir in tomatoes, couscous, salt and pepper
6) Put into a casserole dish, splash with balsamic vinegar and sprinkle with cheese
7) Bake at 350 degrees for 20-30 minutes
