Ingredients

    1 T butter
    1/4 cup slivered almonds.
    1 cup long grain brown rice
    1 small can of chicken stock
    1 bunch of asparagus

Directions

Makes 4, 1cup Servings.
In medium pan, melt 1T butter over medium heat. Put in slivered almonds and toast for 2-3 minutes. Then add 1 cup of long grain brown rice and toast 1 more minute. Add the 2 cups (1 small can) of broth and stir. Cover and cook on low 15-20 minutes (until most of the liquid is absorbed. While rice is cooking, rinse the asparagus bunch. Trim off the spears so that only the top 4 inches are left. You will cut them up in small pieces, cutting on the bias. When rice is done cooking, stir and add asparagus and cover again, cooking about 2-4 minutes longer. Turn off heat and stir again. Enjoy!

    Good flavor but the rice was a little crunchy. I had to cook it a bit longer, but I would make it again. - 4/25/15
