This is a great soup to have if you like stuffed cabbage but do not like the calories or have the time to do the work. put everything in the slow cooker before work and it will be ready when you get home. I serve this at church gatherings and no one is the wiser that it is low calorie soup. Ingredients

    Ground beef, lean, 16 oz
    Beef broth, bouillon, consomme, 6 cup
    V8 Vegetable Juice, Low Sodium, 32 oz
    Stewed Tomatoes, Canned, No salt, 4 Cup
    Onions, raw, 2 cup, chopped
    Cabbage, fresh, 10 cup, shredded
    Minute Rice, 2 cup

Directions

In a slow cooker mix the beef, broth, vegetable juice, tomatoes, onion and cabbage

cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours

before serving stir in the rice and cover and let the soup sit for 5 minutes.
