Ingredients

    1 whole beef shank (soup bone w/meat)
    6 C. water
    6 each beef bullion cubes
    1 qt. home canned tomato juice
    1 C. brown long grain rice, uncooked
    1 T. parsley flakes

Tips

Best made the day ahead to allow for easier fat removal. I make in a crockpot and cook on low for eight hours the first day. In the winter I just cover the crock and place in a safe place on my porch overnight. The next day I remove the fat and either finish in the crockpot or pour into a soup pot to finish on the stove.


Directions

Place soup bone, water, bullion and tomato juice in soup pot. Bring to a boil, reduce heat and simmer until meat falls off the bone. Remove from heat cover and cool overnight in refrigerator. When ready to finish remover fat from the top of soup, add rice and parsley. Bring to a boil, reduce heat, cover and simmer until rice is done.
