Ingredients

140g Quinoa flour
120g Whole almonds finely ground (or just use almond flour)
2 tsp baking powder (GF)
.5 tsp each of ground nutmeg, ground ginger, ground cloves, & ground cinnamon
190g demerara brown sugar (you can use normal brown sugar just fine)
.5 tsp guar gum
a pinch of sea salt
3 medium sized over ripe bananas (mashed gently)
3 eggs (beaten with a fork)
1 tsp vanilla extract
100g coconut oil melted (or 100ml thereabouts)
Tips
Beware - it is addictive!!!
Directions
have the oven preheated to 170 degrees C. Line a loaf tin with baking paper
Mix all your dry ingredients together. In another bowl mix together your wet ingredients (the last 4 - bananas, eggs, vanilla and coconut oil)
Make a well in the dry lot, add your wet lot and mix to incorporate.
Pour into the ready and waiting loaf tin - pop into the preheated oven and await the most gorgeous not too bad for you banana loaf!
