This is my go to recipe for corn muffins. Easy, adaptable and delicious. This is my go to recipe for corn muffins. Easy, adaptable and delicious.
Number of Servings: 11


    1/4 cup butter
    1/4 cup applesauce
    2 eggs
    1 cup yogurt, buttermilk, or I have used juice with good results
    1 tsp salt
    2 T sugar (optional)
    1 tsp baking soda
    3/4 cup cornmeal
    3/4 cup whole wheat flour
    1 scoop protien powder


Measure the butter and applesauce into a bowl. Crack in the eggs and milk or juice. Beat with a whisk. Add salt, soda, cornmeal, flour and protein powder. Stir just till moist. Oil a dozen muffin cups and divide the batter evenly among them. Bake at 400 for about 20 minutes. Remove from oven and cool slightly before serving with honey butter.
