Introduction

Ingredients

1 piece of Barramundi with lemon herb butter
garlic powder
paprika for color
chopped onion ( this is in the hash browns)
chopped scallions( green onions, also in the hash browns)
Spike
black pepper
sage
garlic powder
Italian Seasoning ( on the fish only)
canola or vegetable oil to brown the potatoes
hash brown shredded potatoes
Spring greens
tomatoes- 1-2 slices
Directions
Take a piece of fish out of the package. Season the fish on both sides with garlic powder, black pepper, Spike, sage, Italian seasoning. Place on cookie sheet and bake at 425 degrees according to the package. Chop both onions and the scallions( also known as green onions) Set the scallion on the sided. While the oil is heating at a medium to low heat , mix the onions, and all of the seasoning except the Italian seasoning in a bowl in the shredded potaotes. Saute the potatoes in a skillet brown to the crispiness of your choice. Place spring green on plate, arrange tomato slices on the greens with thinly sliced onions. When fish is done to flaky, place on top of the spring greens and serve the potatoes.
Squeeze lemon wedge on fish, if you choose. If you choose a little ketchup on the table.
