Ingredients

    36 dried jumbo pasta shells
    1 10-ounce package frozen shopped spinach, THAWED
    2 large eggs
    1 8 ounce pckage shredded italian cheese blend (2 cups)
    1 cup ricotta part skim milk cheese
    1 26-32 ouncs jar of spaghetti sauce
    parmesan shredded cheese, OPTINAL

Directions

1. Cook pasta according to package directions: drain. Rinse with cold water and drain again. Meanwhile, drain thawed spinach well, pressing out the excess liquid.
2. Preheat oven @ 350 degrees. Spray a broiler pan with a Pam-like oil spray and spread thinly about 1/2 cup of sauce in pan.
3. For filling, in a medium bowl beat eggs and stir in spinach. Add 1-1/2 cups of the cheese blend and ricotta cheese. Spoon 1-1/2 rounded tablespoons of filling into each jumbo shell. Place shells in the broiler pan or a large baking dish. Pour pasta sauce over shells and spread it a bit. Sprinkle parmesan cheese over the shells (optional)
4. Cover (with foil) and bake 45 minutes or until it starts to bubble.
5. Sprinkle remaining 1/2 cups of cheese blend before serving.
