Introduction
Probably not the best recipe, but a definite improvement of a family recipe where you can't really tell the difference - even though this has half the calories of the original. Ingredients

8 cups potatoes, peeled and cubed
1/2 cup milk
1 Tbsp butter
1 cup chopped green onions
2oz shredded sharp white cheddar cheese
4 slices turkey bacon, cooked and crumbled
Tips
Calories can be cut further by reducing cheddar to 1 oz, and using 2 slices of bacon instead of 4. Or, divide into 8 servings instead of 4.
Directions
Boil potatoes in salted water for 30-45 minutes until falling apart. While hot, transfer to a 8x8 baking dish. Add milk and butter (heat from potatoes will melt butter), and gently mash.
Stir in onions, cheddar cheese, and bacon. Serve immediately, or this can be made ahead of time, and placed in a 350 oven for 15 minutes before serving.
Divide into 4 for 4 servings.
Serving Size: Makes 4 heaping servings - about 2 cups each
