Ingredients

    1 LB Chicken Breasts Cutlets (4 total)
    Olive Oil, 2 tbsp (just enough to brush over top and bottom of chicken)
    Oregano, 2 tbsp (lightly cover top and bottom of chicken)
    Garlic powder, 2 tbsp (lightly cover top and bottom of chicken)
    Del Monte Petite Cut Diced Tomatoes, 1 can
    Feta Cheese, 1 cup, crumbled
    Baby Spinach (raw), 2 cup

Directions

Prepare 1 lb chicken into 4 thin cutlets. Rub on a layer of olive oil and dust with oregano & garlic powder. Bake chicken for approximately 20 min or until done. while chicken is cooking, simmer in a pot the tomatoes and spinach. Add feta and simmer just a bit longer. Add tomatoes, spinach, and feta to top of cooked chicken and return to the oven for a few minutes. This is really good over quinoa. Enjoy!
