    1 cup whole grain quinoa
    2 cups water
    1 can black beans [rinsed, drained]
    1 can corn [rinsed, drained]
    1 bag spinach
    optional: garlic, pepper, other spices, onion, etc.


spray slow cooker.
rinse/drain quinoa, add to slow cooker along with 2 cups water.
rinse/drain black beans and corn, add to slow cooker.
Top with spices of choice.
Cook on high for 2-3 hours. Cook on low for 4-6 hours.
With about 30 minutes remaining, toss in spinach.

Serving Size: makes 4 servings
