Ingredients

    4 cups chopped Romaine lettuce
    1/2 avocado - diced
    1/4 cup diced tomato
    1 small can sliced black olives (8 Tbsp)
    1/2 cup diced jicama
    Lime Vinaigrette (Newman's Lighten Up used in this recipe)

Tips

Add any other favorite veggies: corn, black beans, onion, bell peppers, jalepenos, etc.

Depending on if this will be a side or a meal, you could also add diced grilled chicken.


Directions

Toss all ingredients together & serve in chilled bowls. For a little extra pizzazz, top with a pinch of shredded jack cheese & tortilla strips. (not calculated)
