Number of servings is deceptive: really makes around 10 -11 servings. Nutritional information is for 1 stuffed manicotti to make recording of amount eaten a bit easier. Folks around our house usually like to eat 2 for a meal: kids less, very hungry adults more.

Sodium is a bit higher in this recipe than some may like: this is largely due to the pre-prepared pasta sauce, the frozen spinach and the cheeses. Consider fresh, homemade, and/or low sodium products to help with this.

Ingredients

    1/2 - 1 cup chopped onion
    2 cloves garlic, minced
    1 Tbsp butter
    20 oz (566 g) frozen spinach
    1 lb (500 g) cottage cheese
    4 oz (113 g) Mozzarella cheese
    1/2 cup grated Parmesan cheese
    (additional 1/2 cup parmesan for sprinkling on top)
    3 eggs, beaten
    1 Tbsp lemon juice
    21 manicotti noodles, cooked to slightly under-doneness
    1050 ml (4.5 cups) pasta sauce (1.5 700 ml jars)

Tips

Freezes well, but it may help to add a bit extra pasta sauce when re-heating. Frozen manicotti taste better when reheated in oven but microwave will also do in a pinch.


Directions

Saute onion & garlic in butter until tender.
Combine with spinach, cheeses, eggs, & lemon juice: mix well.
Fill noodles with spinach mixture & place into baking dish that has a small amount of pasta sauce in the bottom.
Pour pasta sauce over noodles.
Sprinkle with "additional 1/2 cup" of parmesan cheese if desired.
Cover with foil & bake at 350 for 40 minutes.

Serving Size: Makes 21 stuffed manicotti
