Introduction

I took the rice/roni out of the box, tossed the seasonings and use McCormick Southwest Salt Free to season. I took the rice/roni out of the box, tossed the seasonings and use McCormick Southwest Salt Free to season.

Ingredients

    Box of Spanish Rice a Roni, discard the seasonings
    1/2 TB extra virgin olive oil
    1 can Hunts no salt diced tomatoes with basil, garlic, oregano
    2 cups water
    12 oz cooked chicken breast (I used the salsa chicken)
    2 TB Pace Picante Sauce, Hot
    McCormick Southwest salt free sweet n savory to taste

Tips

the rice and vermicelli cook quicker with less oil coating them. The box says 15-20 minutes, mine was cooked by 10


Directions

heat oil in large pan, add rice & vermicelli and stir to brown. Add can of tomatoes and 2 cups water. bring to boil and simmer for 10 minutes. Stir in shredded chicken and Southwest spices. continue cooking until all is warm and rice is done. Add Pace Picante at the end to season.
