Introduction

These healthy egg "muffins" are simple to make, store well, and are excellent to take with you on-the-go! These healthy egg "muffins" are simple to make, store well, and are excellent to take with you on-the-go!
Number of Servings: 12

Ingredients

    3 cups of liquid egg substitute
    1/2 cup chopped green bell pepper
    1/2 cup chopped onion
    1/4 cup fat free shredded cheddar cheese
    3 TBS Hormel bacon crumbles

Tips

For an extra "zing," top with some hot sauce and serve with extra lean turkey bacon strips!


Directions

1.) Preheat oven to 350 degrees.
2.) Spray muffin tin with non-fat baking spray.
3.) Pour 1/4 cup of liquid egg into each muffin cup.
4.) Finely chop pepper and onion. Evenly distribute into each cup.
5.) Evenly distribute bacon crumbles into each cup.
6.) Using a small spoon, gently stir each cup so ingredients are mixed throughout the muffin.
7.) Evenly distribute shredded cheese on the top of each muffin.
8.) Bake for 12 minutes.
