Ingredients

    Tofu, soft, 2 block
    Bok Choy, raw-shreaded, 1.5 cup
    Onions, raw, 1 small
    Extra Virgin Olive Oil, 1 tbsp
    Garlic, 1 tsp
    Ginger Root, 1 tsp

Tips

For non-diabetics, you may use some soy sauce or oyster or fish sauce to make the dish tastier


Directions

Wash the Bok Choy and Shred them
Cut the Tofu in small cubes
Chop the onion

In a pan heat the oil on medium heat. Add the chopped onion, garlic and ginger then the Shredded Bok Choy until they cook then add the Tofu and keep stirring until everything is mixed and cooked
