Introduction

Easter special polish vegetable salad made with carrots, parsnips, radishes, eggs, apple, pickles, green onions and mayo. Great Brunch side dish. Easter special polish vegetable salad made with carrots, parsnips, radishes, eggs, apple, pickles, green onions and mayo. Great Brunch side dish.
Number of Servings: 8

Ingredients

    5 Carrots - boiled
    3 Parsnips - Boiled
    2 Hard-boiled eggs
    5 radishes
    3 medium pickles
    1 Granny smith apple
    4 green onions
    1 cup Light Mayonnaise
    salt and pepper to taste

Directions

Cook carrot and parsnips until tender but not mushy. Let cool. Chop all items into little chunks. Mix all together with Mayo, salt and pepper to taste. Best refrigerated for at least one hour before serving, but not necessary.

Serving Size: makes about 8, 3/4 cup servings
