Ingredients

    1 cup mango chutney
    2 eggs
    3/4 cup nonfat plain yogurt
    1/2 cup packed dark brown sugar
    1/4 cup vegetable oil
    1/3 cup unsweetened applesauce
    2 tablespoons dark spiced rum
    1/4 teaspoon salt
    2 teaspoons ground ginger
    1 teaspoon cinnamon
    1/4 teaspoon ground cloves
    1 cup all-purpose flour
    1 cup whole-wheat flour
    1/2 cup dried cranberries

Directions

Preheat oven to 350° F, and grease a 9" pan.
Purée chutney in a food processor until smooth.
Add eggs, yogurt, brown sugar, oil, applesauce rum, salt and spices. Process until smooth. Add flours and with on-off pulses, process just until blended.
Add cranberries and pulse to blend.
Scrape into pan and bake 35 minutes.
Cool completely before cutting and serving.
