Ingredients

1 1/4 cups Yellow Corn Meal
1/4 cup melted unsalted butter
1 cup all-purpose flour
1 tablespoon baking powder
1/2 cup sugar
1/2 teaspoon salt
1 cup milk
1 egg
Tips
I just added a sprinkle of salt. Margarine can be substituted for butter. If you use salted butter, don't add more salt.
Directions
Preheat oven to 400F. Melt butter. Combine dry ingredients. Add milk, egg and melted butter and mix well. Combine dry and liquid ingredients in a bowl until slightly lumpy. Pour batter into a well-greased 8 inch square pan. Bake 20 to 25 minutes or until golden brown.
For corn muffins: Pour batter into 12 greased or paper lined medium muffin cups. Bake 15 to 20 minutes or until golden brown.
Serving Size: makes 12 slices or 12 muffins
