Sorry for the odd measurements, just my own blend of gf flour.. comes up to two cups of flour blend.

I used less than a tablespoon of pecans but you may add more.

Alternately, you may want to exclude the cane sugar altogether, if you find that the bananas are sweet enough to your taste on their own. :)

**for gallbladder diet, I find these palletable and non-aggravating but if you are more sensitive, sugar may be excluded (or substitute honey/agave nectar) and possibly exclude pecans/substitute almond milk for coconut milk

Number of Servings: 12

Ingredients

    2 cups GF flour blend (half sorghum, half brown rice, with a few (4ish) tablespoons of buckwheat)
    2 tbsp ground flaxseed
    1-2 tbsp cane sugar
    1 tbsp baking powder
    1/2 tsp baking soda
    1/4 tsp sea salt
    1 cup almond milk (may be vanilla flavoured)
    3/4 cup coconut milk
    1 tsp vanilla extract
    2 bananas, mashed
    3/4 cup unsweetened shredded coconut
    1 tbsp crushed pecans

Directions

Mix dry ingredients,
Add wet ingredients,
Add mashed bananas,
Add coconut and crushed pecans,

Spoon evenly (about two and a half tbsp each) into nonstick cupcake/muffin tin

Bake at 350 for about 25-30 minutes

Let cool thoroughly before removing from tin.

Makes 12 medium muffins
