Introduction

Chicken is sauteed in water from mandarin oranges and 2tsp of organic soy sauce then placed over other ingredients that have been tossed with thinned and lightened dressing. Ingredients

    3 -- 4oz chicken breasts sauteed in ONLY THE WATER from can mandarin oranges mixes with 2 tsp organic soy sauce. Cook until water boils off and chicken is browned.

    Toss chicken into large salad bowl. To it add

    2T sliced almonds
    1T sesame seeds
    1/3 cup drained mandarin oranges
    3 minced small carrots
    1 yellow bell pepper minced.

    In a separate bowl use salad spinner to wash and dry:
    3 c EACH of finely shredded green cabbage and romaine hearts

    Toss the greens with the other bowl of ingredients. In a separate bowl make dressing.

    1/4 cup bolthouse farms yogurt honey mustard dressing whisked with 2 T rice vinegar and 2 T water to thin dressing.

    Pour this dressing over salad. Toss with tongs to coat and serve.

    Serves 2 a large entree, or up to 6 as a side salad.

Tips

if you don't want to saute chicken in water then splash soy sauce on after cooking it. The sugars in soy sauce carmelize and bun quickly if there is no water to buffer.
