Introduction

This is an easy way to get your veggies in without the prep work or sodium. You can throw this together in the crockpot on a Sunday and have it all week long for lunches or snacks. Number of Servings: 10

Ingredients

    1 cup chopped onions
    1 cup chopped celery
    1 cup chopped carrots
    2 cups chopped potatoes
    2 cans low sodium V8
    1 package (32 oz.) Hanover Vegetables for Soup
    1 T. Mrs. Dash (I like the Extra Spicy Blend)

    About 8 cups of water (use enough to cover your veggies)

Tips

Add 1/4 cup TVP per 2 cup serving to boost your protein. I also add 1/4 teaspoon of low sodium Old Bay seasoning too.


Directions

Throw it all in a pot or crockpot and cook to desired consistency. How easy is THAT?

Serving Size: I divide what ever I have into 10 containers to use throughout the week. It is about 2 cups per serving.
