A little twist on my regular macaroni salad. A little twist on my regular macaroni salad.
Number of Servings: 6


    1 1/2 cups - Catelli Smart Macaroni
    2 - Green Onions, finely chopped
    2 medium - Celery Stalks, finely chopped
    1 small - Carrot, finely chopped
    1 small - Cucumber, finely chopped
    2 large - Eggs, cooked and chopped
    1/2 cup - Hellman's Light Mayo
    1 Tbsp - Catalina Salad Dressing
    Salt & Pepper
    Garlic Powder - Pinch
    Paprika (just for colour on top)


In a saucepan bring water to a boil, add macaroni and cook until al dente.
In a medium bowl add chopped veggies, macaroni and one of the chopped eggs. Add salt & pepper to taste, a pinch of garlic powder, mayo and salad dressing.
Mix until fully combined.
Lay 2nd chopped egg on top of salad and sprinkle with paprika.

Serving Size: Makes 6 - 1/2 cup Servings
