Ingredients

    3/4 pound leftover pork
    1 cup chopped celery
    3 cloves chopped garlic
    1 Tbsp. olive oil
    6 cups water
    3/4 cups lentils
    32 ounces tomatoes
    3/4 pearl barley
    2 teaspoons salt
    1/4 teaspoons pepper
    1 cup carrots
    1/2 teaspoon rosemary

Directions

Add celery, garlic and saute in olive oil until golden.
Add in pork, and cook, if you're not using leftover pork.
Add water and lentils. Cook 20 minutes.
Add tomatoes, barley and spices. Cooke 45-60 minutes.
Add carrots and cook 5 minutes or until your liking.

Can also simmer all day in crockpot
