Ingredients

    1 medium russet potato (about 3inch diameter or 5 oz)
    canola oil cooking spray
    1/8 tsp garlic powder
    1/8 tsp onion powder
    1/8 tsp chili powder
    pinch cumin
    salt and pepper
    1/8 cup cheddar cheese
    1 tbsp sliced scallion
    1 tbsp choped pickled jalapenos
    1/2 tbsp ranch to serve

Directions

peel and slice potato into fries about 1/4 inch thick.
in a bowl spray with cooking spray and sprinkle on spices, toss to coat.
bake at 350 on aluminum foil sprayed with cooking spray for about 20 minutes turning halfway through.
add cheese, scallion and jalapenos and bake 5 more minutes or until cheese melts
