Introduction

I most often make this dish in autumn-- it's flavors are especially fitting for that season-- but it is delicious all year round. Great with ham or glazed pork! Number of Servings: 6

Ingredients

    3 cups water
    1 1/2 cups brown rice
    1 large gala apple, finely chopped
    1 large onion, finely chopped
    2 or three tbsp light soy sauce (more or less to taste)
    6 tsp brown sugar

Directions

Core the apple and peel the onion, then finely chop both. Pour water into medium pot and place over high heat. Cover to bring to a boil. Remove lid and add soy sauce, rice, apple and onion. Stir slowly to keep rice from sticking until it reaches a boil again. Reduce heat to low and place lid back on pot. Simmer for about 45 minutes or until rice is fluffy, stirring occasionally. Serve hot.

Serving Size: Makes roughly 6 2/3 cup servings

  • I left out the sugar and soy sauce and it was delicious! I add finely diced celery and a dash of cinnamon for sweetness. I make this as a gluten free alternative to stuffing when I roast a turkey. So good! - 5/2/18
