    1 lb chicken breast cooked and diced
    1 package frozen broccoli (you can use fresh)
    4 tbsp Smart Balance margarine
    4 tbsp flour
    2 cups skim milk
    1 cup low fat sour cream
    1 cup guyere cheese (or whatever cheese you prefer)
    1/2 cup parmesan
    salt and pepper to taste


You can cut down on the cheese and you can use a no fat sour cream. The cheese will cover the taste and your family won't know the difference. The bread crumbs can be omitted, it is still very good. Low fat cheeses don't melt as well but you could experiment with those to see what works.


Melt margarine into a sauce pan, whisk in flour. When well incorporated add milk, cook until thickened. Take off burner, add sour cream, whisk until well incorporated, add cheeses. Place chicken and Broccoli into casserole dish, then pour in sauce, mix well. Sprinkle bread crumbs over top, you can add a little parmesan cheese too if you want. Bake in 375 oven for about 35 - 40 minutes.

Serving Size: makes about 8 servings, about 1 1/2 cups
