Introduction

Ingredients

    One large cucumber, peeled and seeded, chopped
    One medium tomato, seeded, chopped
    1/2 green bell pepper, seeded, chopped
    3/4 can of large black olives, drained
    1 TB fresh lime juice
    1 clove minced garlic
    salt, pepper to taste
    1 TB balsamic or other flavorful vinegar
    1 medium Haas Avacado, chopped (add as garnish)

Tips

reduce olives or omit avacado to significantly reduce calories.


Directions

Seed and chop vegies, add garlic, olives, vinegar, lime juice, salt & pepper. Toss well. Add avacado after serving to keep them chunky and improve visual appearance.

Serving Size: 1/2 of recipe for a good sized bowl.
